So, if I’m being completely honest here (which I strive to be), I hated this dessert. This is the second time I’ve used this cake recipe and both times I have hated the result. It is a very dense cake, and not very flavorful despite the lemon zest and lemon juice. I put three different recipes together for this cake. I will give you the link to each.
First, the cake. I don’t know what it is about this cake but if you don’t allow yourself plenty of extra room in the cake pan you’re using, it will bubble over. Secondly, you bake it for 30 minutes and THEN you are supposed to cover it with foil and bake it for an additional 12-15 minutes. What? How exactly do I do that without burning the flesh off of my bones!? At least this time I knew it bubbles over and put my pans on cookie sheets so it didn’t go all over the bottom of my oven. Second, the frosting. I actually like the frosting even though it’s super not good for you. And I halved the recipe. If I had made it as intended, I would have had way too much. It did get mixed reviews. Some thought it was too tart, some thought it was just right. If you make it, taste it and adjust your powdered sugar accordingly. I probably just added too much lemon juice so I didn’t waste the lemon I had zested. I do wish I had refrigerated it before frosting the cake though, it was somewhat loose and drippy. It probably could have used more powdered sugar to thicken it up. Lemon Cream Cheese Buttercream
Lastly, the blueberry sauce. Again, this is preferential. Some people like blueberries, some don’t. I get it. My daughter tried to get the syrup without the blueberries. It wasn’t overly tart from the blueberries but it wasn’t overly sweet either. I think it would make a great topping for pancakes, waffles, or french toast as well as this cake. Bottom line here is this: I dumped the cake recipe from my Pinterest dessert board. I will try some other lemon cake recipes until I find what I’m craving.
